Herring is enjoyed in different ways, however, Goi (the dish made from raw herring and vegetables) is most popular and a specialty on Phu Quoc Island .
After selecting fresh herring and cleaning, the fish is boned and sliced into thin pieces. Next, the meat is mixed with a dash of sugar, seasoning and garlic. Other important ingredients are rice paper, mints, some varieties of forest vegetables and shredded coconut meat that is sweet, crisp and tasty.
To prepare the food, place a stack of rice paper in a dish of water to make them pliable. Dip every piece of fish into a boiling broth made mainly from coconut milk, rice vinegar, sugar, seasoning, pepper and garlic. Place the fish and some vegetables on the rice paper and roll it up. The dish is served with Phu Quoc fish sauce spiced up with pieces of red pepper.
