Delicious Cakes of Hue


Countless articles have been written and stories told about the history and people of the Imperial City of Hue in Central Vietnam, yet one of its most overlook contributions to the country’s culture is the delicious Banh Hue ( Hue cake).

Banh Hue is the umbrella term for the cakes of which there actually are many different types, differing on ingredients and processing procedure but all sharing the common base ingredient of rice flour.

Phrynuim leaves are used to wrap the cakes, the most typical of which is the Banh nam. To make this cake requires skilful hands that can arrange the pastry evenly on the leaf, topped off with a fried shrimp then wrapped into a rectangular shape. Banh nam is considered a delicacy and is served with shrimp pie.

Banh bot loc (sticky tapioca flour dumpling).

Banh khoai (plain rice flan).

Banh bot loc is made from the finest tapioca flour, hence its cover is pliant and so translucent that the shrimp inside the wrapping can be seen. Both Banh nam and Banh bot loc are served hot.

The fillings include shrimp, pie, lean pork, fresh bean sprouts, chicken egg and green onion. Banh cuon with grilled pork is delicious and easy to make. The steamed pancake is the size of one hand but thick enough to roll the grilled pork inside. It is served with a dipping sauce consisting of shrimp broth, lemon, fish sauce, garlic, sugar and chilly, so the sauce is salty, sweet and sour, and spicy.

These delicious cakes are loved not only by people from Hue, but also nationwide, and they are served in restaurants specialized in making Hue cakes in big cities, including Hanoi in the north and Ho Chi Minh City in the south.

Sticky rice and fresh-water anabas


Fresh-water anabas from Set Lagoon is known as a special dish of Hanoi because the lagoon is revered as having the tastiest fish in the area, especially in autumn with the rice paddy begins to turn yellow. It is recorded that in the days when Vietnam had kings and lords, the anabas from Set Lagoon was served at the royal table.

Anabas can be prepared in a number of ways but a popular dish in Hanoi is fried anabas with sticky rice, as prepared by Kinh Ky Restaurant at No.31 Hang Voi Street, Hanoi.

According to Van Anh, the owner of the restaurant, to make the dish it is necessary to select anabas with a yellow, plump body. After cleaning, scaling and gutting, put the fish in a pot of water and boil. When the water starts boiling, skim to keep the broth clear. When the fish is well-done, remove all the meat from the bones and add to it a dash of seasoning. Crush the head and put it and the fish bones in a pot of water and boil to create a tasty broth. Filter the broth with a colander and use to cook the sticky rice. Fry dry onion until brown and add the fish with a tablespoon of fish sauce. Lastly, cover the sticky rice with the fish meat and steam for a few minutes.   

Place the sticky rice and fried fish in a small earthen pot.

The dish is served hot.

After selecting fresh herring and cleaning, the fish is boned and sliced into thin pieces. Next, the meat is mixed with a dash of sugar, seasoning and garlic. Other important ingredients are rice paper, mints, some varieties of forest vegetables and shredded coconut meat that is sweet, crisp and tasty.

To prepare the food, place a stack of rice paper in a dish of water to make them pliable. Dip every piece of fish into a boiling broth made mainly from coconut milk, rice vinegar, sugar, seasoning, pepper and garlic. Place the fish and some vegetables on the rice paper and roll it up. The dish is served with Phu Quoc fish sauce spiced up with pieces of red pepper.

He also makes characters, such as Sun Wukong, Zhu Baje and Sha Wujing from the famous film “Journey to the West”.

Ba Na Telpher gains four Guinness World Records

The third cable car route of the Ba Na - Suoi Mo telpher system in the central city of Da Nang, developed with capital of EUR30 million, will be officially put into operation on March 29, with a capacity of 1,500 passengers each hour. 

This is also the only cable route in the world recognised with four world records by Guinness World Records: the world’s longest single-cable telpher network (5,771.61 meters), the highest gap between the arrival and departure stations (1,368.93 meters), the heaviest cable roll (141.24 tonnes) and the longest cable wire unit (11,587 meters). The operation of the third cable route will shorten the journey from the mountain foot to the peak to 17 minutes. The route will have 86 open-design cabins, each with 10 person capacity, moving at a speed of 6 meters per second.

The third cable route was constructed in accordance with the standard of the World Telpher Association and was built by well-known cable producers Doppelmayr (Austria) and CWA (Switzerland).

The event, themed “Flavours of Spring Tea – Tan Cuong Tea Speciality Area,” was one of the activities leading up to the second International Tea Festival to be held in the province this year.

The annual festival aims to honour the tea tree and traditional tea growing industry in Tan Cuong, which produces one of the most popular tea brands in the country. It is also a meeting place for growers, producers and drinkers of Tan Cuong tea in particular and Thai Nguyen tea in general.

A wide range of activities were held during the festival, including tea offering ritual, art performances by local people and folk games.

After the incense offering ceremony at 22.00pm, 120 local selected villagers walked in procession carrying 40 seal sedan chairs from Co Trach Temple honouring General Tran Quoc Tuan to Thien Truong Temple where 14 Tran Kings’ plaques are located.

In his speech, the chairman of the Nam Dinh city People’s Committee highlighted the great contributions that the Tran dynasty made to the nation, and declared the start of this year’s seal issuance ceremony.

During the three-day event held annually on the 14th, 15th and 16th days of the first lunar month, various activities are taking place, including lion dances, classical opera performance, chess competitions, martial art performances, and traditional wrestling competitions.

Speaking at the ceremony, Le Van Giang, Chairman of the Hoi An City People’s Committee, stressed that the city has spared no effort to improve its services and facility in order to maintain reputation as an attractive destination for domestic and international tourists.

Hoi An was recognised as a World Heritage Site by UNESCO in 1999. Its building and its street plan reflects the influences, both indigenous and foreign, that have combined to produce this unique heritage site.

The Con Son-Kiep Bac 2013 Spring Festival opened at Con Son pagoda in the northern province of Hai Duong on February 25 (the 16th day of the first lunar month). 

The opening ceremony was attended by Deputy Minister of Culture, Sports and Tourism Dang Thi Bich Lien, Permanent Vice President of the Vietnam Buddhist Sangha’s Executive Council Most Venerable Thich Thanh Nhieu, and leaders of Hai Duong province and other localities in the region.

The festival is the first of the four major activities to be launched in Hai Duong province to mark the 2013 National Tourism Year of the Red River-Hai Phong. It aims to commemorate the 679th anniversary of the death of monk Huyen Quang, the third founder of the Truc Lam Zen sect.

Taking place from February 23-26, the festival features a broad range of cultural and sporting activities such as incense offering rituals, worshipping rituals on the Ngu Nhac Mountain, a Chung cake (square glutinous rice cake) and Day cake (round glutinous rice cake) making contest, wrestling, calligraphy and Quan Ho (love duets) singing.

From the 15th to 20th day of the eighth lunar month, the Autumn Festival will be held at Kiep Bac Temple to commemorate national hero Tran Hung Dao, who made great contributions in the fight against Yuan-Mongol invaders from the north in the 13th century.

Covering a total area of eight hectares in Chi Linh district, the Con Son-Kiep Bac historical site is entwined with the lives and causes of Tran Hung Dao and the Great Man of Culture of the World, Nguyen Trai.

The site was a defence line built at the end of the 13th century to protect the Thang Long Imperial Citadel. It witnessed important battles between the Tran dynasty army and the Yuan-Mongol invaders.

Con Son, surrounded by pine trees, saw the pure and upright life of Nguyen Trai (1380-1442), one of Vietnam's most famous poets and writers.

Con Son-Kiep Bac was recognised as a national heritage site in 1962 and a special national heritage site in 2012. The same year, the Ministry of Culture, Sports and Tourism awarded the Spring Festival the title of national intangible cultural heritage.

It’s very important to include cuisine in tourism development plans, especially for Hanoi which boasts plentiful and delicious dishes such as Pho (rice noodles served with beef or chicken), nem (spring rolls), bun thang (rice noodles with chicken, fried egg, lean meat pie , La Vong grilled fish pies, Thanh Tri steamed rice rolls, Ngu Xa rolled rice pancakes and Ho Tay shrimp cakes.

Stressing the quintessence and unique cuisine of Hanoi , Pham Anh Tuyet, the owner of a restaurant on Ma May Street, said delicious food is the key to drawing tourists back to the country.

She said that her restaurant is not only a place to introduce the gastronomy of Hanoi to tourists but also provides an opportunity for them to make Vietnamese dishes.

“Tourists have an interesting experience here as they make food by themselves and enjoy it,” she said, adding many return to thank her after they have brought Vietnamese recipes to their countries.

However, such a tourism model like Tuyet’s restaurant is not popular, although industry insiders recognise its advantages and attractiveness.

How to develop the cuisine culture into a special tourism product and a national trademark is a hard question for tourism managers.

To realise the idea, the Vietnam National Administration of Tourism (VNAT) recently assigned Vietravel Tourism Company to build a project to develop the Vietnamese gastronomy.

The project is being built with concrete strategies, solutions and programmes to popularise Vietnamese food culture to the world, which will attract tourists and develop overseas Vietnamese communities’ business activities, said Vietravel CEO Nguyen Quoc Ky.

According to Ky, a chain of restaurants will be built to introduce local dishes to tourists in Vietnam . Meanwhile, in the international arena, relevant agencies will work with associations of Vietnamese chefs to popularise the Vietnamese gastronomy and develop its image.

In addition, Vietnamese food will be introduced at fairs and cultural events, he added.

Once approved by the VNAT, “the World’s Kitchen” national trademark will be completed by 2020, and bring Vietnam to the world.

A project to restore and upgrade the tomb and temple of Kinh Duong Vuongwas launched the same day in connection with the occasion. The project, which has a total investment of VND17 billion (US$816,000) funded by the Bac Ninh provincial Department of Culture, Sports and Tourism, is expected to be completed within 270 days.

The three-day festival is part of the activities in response to the National Tourism Year 2013, which highlights the Red River Delta region.

Legend has it that Kinh Duong Vuong, alias Loc Tuc, established the first primitive state named Xich Quy in 2879 BC. His son, Lac Long Quan, married fairy Au Co, the daughter of De Lai. Au Co then gave birth to a pouch filled with one hundred eggs, which soon hatched into one hundred sons. Soon after, Lac Long Quan and Au Co separated. Lac Long Quan went to the coasts with 50 children and Au Co went to the highlands with the others.

Their eldest son was made the King, who named the country Van Lang and set up the capital in Phong Chau (nowadays Viet Tri city, Phu Tho province), starting the 18 reigns of Hung Kings.

The Kinh Duong Vuong – Lac Long Quan – Au Co Temple festival opened in Thuan Thanh district, Bac Ninh province on February 25 (the 16th day of the first lunar month) in the presence of Deputy Prime Minister Nguyen Thien Nhan.

Deputy PM Nhan offered incense to the national ancestors and beat a drum to open the festival.

Bai Tu Long Bay: A national treasure

Located in the northern province of Quang Ninh, Bai Tu Long National Park comprises 40 islands, either earth or limestone, scattering across three communes, Ha Long, Van Yen and Minh Chau of Van Don district. 

The bay covers a total area of 15,783 hectares, including 6,125 hectares of land, and is home to 1,090 species of fauna and flora. The park is considered a priceless national treasure.

According to Associate Professor Dr. Bui Tat Thang from the Strategic Development Institute of the Ministry of Planning and Investment, Bai Tu Long includes all three fundamental ecosystems: forest, wetlands and sea – a diverse area for different species to live and develop.

In the park, 102 rare and precious species, including 72 species of fauna and 30 varieties of flora listed in Vietnam’s red book of endangered species can be found.

The park also has 1,000 hectares of wetlands, which includes mangrove forest, sandy and rocky tidal banks and seaweed that provide food and shelter for animals.

The wetlands ecosystem, with its impressive scenery and biodiversity, has attracted many eco-tourism, environmental education and research activities.

The area of coral accounts for only a minor section of the park, but has an important role to play as an aquatic resource. It has high biological productivity and is a gene bank for many types of sea species.

Besides the extremely diverse biological environment, the park also has archeological value, with evidence of ancient Viet people residing here 14,000 years ago.

Operational since April, 2002, Bai Tu Long National Park is a stunning tourism spot with a rich ecosystem, therefore it should receive sustainable protection, conservation and development.
